Lácteas Zamoro makes its old cured sheep's cheese, ‘Ciudad de Sansueña’, with selected raw sheep's milk, following a traditional recipe. The milk is thermised and not pasteurised so that it maintains all its natural and organoleptic properties.
We use natural curds to coagulate the milk. The curd is passed to the filling machine to be put into moulds. They are then placed in the pressing area to extract the excess whey. Once the pressing time has elapsed, the cheese is removed from the moulds and placed in brine.
In this way, we obtain a natural rind, free of artificial products, which will acquire its characteristic colour during the maturing process for eleven (11) months in our chambers. The result is a natural, unique and healthy product that will delight our senses.
