Made with 100% raw sheep milk,this is a cheese with a very firm consistency and a smooth, thin and hard honey-coloured natural rind. When cut, it can be seen to have occasional, uniformly-distributed mechanical holes and has the characteristics of a firm "aged" cheese. It does not have the roughness of an old cheese, but retains the characteristic melt-in-the-mouth quality of our cheeses, even after a 12-month maturing process. The flavour is linked to the maturing period and the fact that the milk comes from our own ewes. Our Reserva cheese is strong, clean and aromatic.
Curing period: From 11 to 13 months.
